This
filling, economical family dessert is a good way to use up
slightly stale bread, any type of bread will do, but whole
wheat is richest in fiber.

Ingredients
1 lb cooking apples
3 oz whole wheat bread, without crusts
½ cup cottage cheese
7/8 cup low-fat milk
3 tbsp light brown sugar
1 tsp demerara sugar

Preheat the oven to 425F. Peel the apples, cut them in quarters
and remove the cores.

Roughly chop apples
into bite size.

Cut the bread into
½ in dice.

Toss together the apples, bread, cottage cheese and sugar.

Stir in the milk
and then spoon the mixture into a wide ovenproof dish. Sprinkle
with the demerara sugar.

Bake for 30-35 minutes, or until
golden brown and bubbling. Serve hot.
