PAPAYA SKEWERS WITH KIWI SAUCE
 
 

Serves 6

Ingredients
3 ripe papayas
10 kiwi fruit
2 tbsp lime juice
2 tbsp confectioner’s sugar
2 tbsp white rum
Toasted coconut, to garnish(optional)

 
1. Peel the papayas and cut the flesh into even-size chunks.
   
 
2. Halve eight of the kiwi fruit and scoop out the flesh. Puree the flesh for a few seconds in a blender or food processor.
   
 
3. Press the pulp through a sieve and discard the seeds. Add the lime juice, sugar and rum, and then stir well until the sugar has dissolved.
   
 
4. Spoon a little sauce on to six serving plates. Place the skewers on top. Scoop the flesh from the remaining kiwi fruit and spoon it over. Sprinkle with a little toasted coconut, if you like, and serve.
