WATERMELON, GINGER & GRAPEFRUIT SALAD

Ingredients
1 lb/2 cups diced watermelon flesh
2 ruby or pink grapefruit
2 pieces preserved ginger in syrup
2 tbsp preserved ginger syrup

 
1. Remove any seeds from the watermelon and cut into bite-sized chunks.
   
 
2. Cut away all the peel and white pith from the grapefruits and carefully lift out the segments, catching any juice in a bowl.
   
 
3. Finely chop the ginger and place in a serving bowl with the melon cubes and grapefruit segments, adding the reserved juice.
   
 
4. Spoon over the ginger syrup and toss the fruits lightly to mix evenly. Chill before serving.
